Minor update on the layout: the curious baby wants a look around. Rotating the wheel between the legs manages the roll, while moving the wheel support arm up and down controls pitch (until i can think of something better)

Worth noting that the instruments and switches are operated by the beak rather than hands. The eyestalks remain steady during bumps which is one advantage of them!

The flight instrument panel probably needs to be like 25% closer to the pilot. That would help in two ways: the toggle switches and adjustment knobs would be within the easy reaches of the stationary pilot's hands, and the flight instruments would be easier to read accurately in the shaky and bumpy ride of a small aircraft. The term "bumpy" is important because the birrin's necks don't point vertically like we humans do and therefore their necks aren't as steady for plane's up/down movement, if not also for horizontal movements. You can't, however, move the instrument panel too far backwards because then it would start to obstruct the pilot's forward visibility. Speaking of visibility, the design of the instrument panel itself looks very good: very minimal obstruction that reminds me of the cockpit of a Robinson R44 helicopter, for example.
