There is some good video essays here on YouTube about this show that will give you more appreciation while you watch. IMO

The art style, characters, mature themes and music, in particular, are all stand outs. Cowboy Bebop might well have the best soundtrack in the history of the medium -- Yoko Kanno is a genius! I look forward to the rest of these reactions!
