I think you are totally correct about this Eric...it's all about perception when it comes to eating meat, and about people being desensitized to eating certain animal meat and not others.
As a beef, pork and chicken eater myself, it would be kind of hypocritical of me to frown upon people who eat meats that I might not be comfortable eating just because of my perception or emotional attachment I might have towards certain animals.

I didn't enjoy the taste or texture of the meat, but it was probably low-grade as it was only $2USD for the plate.
I kind of agree on eating different animals, meat really is meat. I think what trips people up is that horses are something we typically name, which gives a bit of intimacy towards their species that we don't have with cows, chickens or pigs. Well, that's just a guess anyways.

Was it good? To eat horse is very common here in Switzerland, but I personally don’t like it very much. But I can’t understand why so many people have a problem with it. In my opinion every animal is equal. You eat meat… or not. How can you look into the eyes of a calf and say “it is ok to kill you and eat you, but the horse over there is just for grooming and riding”. It is all about the respect for the animal and the product, not about the race. I do not want to offend anyone, just my opinion.
