Indian (India) is one of my favorite ethnic foods and they use a lot of lentils.

I used to cook a lentil stew...dont have the exact recipe now...but it was lentils, potato dices, carrots, celery, onion, bay leaf all simmered in chicken stock...it was a satisfying dish.
