Right? When my kids were little I made Dinner in a Pumpkin which was ground beef, rice, and veggies stuffed in a pumpkin or acorn squashes and cooked. When you dip it out you scoop pumpkin out with it. I read that it was a huge staple for the sellers when they first came here too.

My Mother in law would always do a Sunday roast and would add sweet potatoes and pumpkin when in season. New gardeners should look up "eating pumpkins". You'll find very fleshy pumpkins. Carving pumpkins are almost hollow inside except for the seeds with a couple of inches of flesh inside.
