I don't think Carmy actually read the review, I think he just saw that Uncle Jimmy and Computer called him a bunch of times right when the review was released so he probably just assumed the worst. Also, they left what's going on with Jimmy a little unclear, but it sounded like he recently lost a ton of money in the stock market based on his conversation in his car with Computer on the last episode, and he was probably supposed to tell Carmy that he's gotta call in the restaurant loan early and sell the building and lot to try to recoup some of his losses, but kind of chickened out of it.

The first scene takes place at The French Laundry, widely regarded as one of the best restaurants in the world. The chef who shows Carmy how to truss a chicken is Thomas Keller (TK), the owner of the actual French Laundry, widely regarded as one of the greatest chefs in the world. He has the distinction of being the only American chef in the world to simultaneously own two Michelin 3 star restaurants - The French Laundry in Napa Valley, and Per Se in New York City. He owns a third restaurant in Miami called The Surf Club, which has 1 Michelin star. Nearly all of the chefs at the funeral dinner at Ever are actual famous chefs playing themselves. In the real world they own highly acclaimed restaurants all over the country. It was basically like a bunch of Hall of Famers getting together. The chef Luca was talking to was Grant Achatz, the owner/executive chef of Alinea, widely regarded as the best restaurant in Chicago (3 Michelin stars). Achatz is also the TV spokesperson for Made In Cookware - extremely high quality and extremely expensive pots and pans - their 12" stainless steel pan costs about $140. For one pan.
