I took an unusual but probably smart approach to watercolours when I first got into them over two decades go: I laid down pretty regular, uniform, light washes on top of each other in ridiculously small formats, as in comics or cell-shading, and thus learned how they behaved and handled, without going all-out with the wet into wet. That allowed me to gradually try my wings with more advanced techniques later on - when it finally dawned on me that comics were not usually, in fact, colourd with watercolours! :D

(Though I've an inkling how difficult they are, too!) I do think you're right that watercolour doesn't have an ugly stage, though. Stunning.
