They definitely wouldn't think that Hinata is the best player there, it's been emphasized both through S3 and these episodes of S4 that without Kageyama, Hinata hasn't much to offer, doesn't have techniques or polished fundamentals in other areas than spiking. This is the whole point of this arc! Hinata, as he puts it himself here, needs to rethink the way he sees things and from an angle that broadens his skillset rather than hyper-specialize.

My dad would play volleyball all with a local group from his church and all of us kids would run around in the hallways of the church school. Most of us later play volleyball in high school or college and then play with that original group when we'd be in our hometown for the summer or the holidays. It was so satisfying to finally play with the adults after years of seeing them playing. I'm a girl, btw, but I loved that my dad taught me sports and let me tag a lot. I love basketball and volleyball because of him. I'm sure your kids will have good memories of you guys playing memories and eventually teaching them the sport, too^^

What you mentioned at the beginning is right. When I try to learn something or improve at it, it really helps me to watch how skilled people do it. Just actively engaging with and thinking about it helps me get better and feel more comfortable doing it. Even if it's "just anime," it still inspires many to improve or try new things. Hinata has obvious weaknesses and strengths (probably most obvious in the entire show, especially in fundamentals). The proper strategy would have been to work a lot on improving his fundamentals, but it takes a lot of time. Instead, they focused on his new attack, and even when it failed, they focused on improving it. Even for other teams (like Nekoma), he is a benchmark for being bad at receiving and serving. This strategy proved to be effective, because it was Karasuno's surprise factor, but what about next two years? Without current third years, these weaknesses would be more apparent and opponents will adapt and punish these mistakes. I think this is what coach was talking about, and Ushiwaka (and their coach as well) quite dislike this about Hinata.
