Make sure you have everything you need for the clean in advance..nothing says buzz killer like having to leave everybody to be the designated runner..been there. Though I don't think anyone besides MAYBE that pothead dishwasher who's always "on break" will be coming in to clean. Think about it this way (and BE HONEST with yourself): if you WEREN'T the manager would you come in ALL day to scrub and wipe down stuff just for a couple slices of 'Za and some fruit punch? What you do is you let everybody clock in at a special hourly rate thats the same for everyone so no one is working the same hours and making more than anyone else. That's the only fair way of doing it. I know if I worked for you and was given a 50$ gift card or pizza for a day of deep cleaning, I would quit on the spot.
