The problem is KIse looks so much up to Aomine. Aomine has never lost and for Kise he both wants to beat Aomine and doesn't to take that godly status away that's pushed him so much. He just getting over a lot of self made barriers including trying to copy his style. Also heck yes on the Kise love! This match is really then one that makes you care about him more and more. Definitely up there with the best.

I feel like Kise has to be the coolest character though - imagine being able to perfectly copy and master all styles of gameplay, insane!!

When Kise says "I feel better not knowing if I'll win" it's not really doubt but the feeling of excitement from not knowing from the get-go that he'd win. Things can get unexciting when the result is predetermined for an athlete. They thrive for victory against equals, crushing people all the time feels bland. That's also what Kagami mentioned early in the season, when they played Kise, which is a nice parallel to see again here.
As for his look and shake of the head to Aomine, it's because it's not the kind of way he wanted to go against him. One more foul and he'd be out of the game, hence Kaijo ending up winning in a "cheap" way in Kise's vision. He wants to beat Aomine at full throttle, a dream he's always had.
Usually, players with 4 fouls either get benched or if they're too valuable to bench, they stay on but temper their intensity to avoid being excluded due to a 5th foul. Thankfully for Kise, Aomine is way too confident to back down just because he has 4 fouls, so they will get their battle in full in the next episode :D
