The written materials explain a few things that the anime has skipped over: 1) Adalmann knows the current situation of the Church because he had access to Clayman's information. 2) The next evolution for Hobgoblins is to Ogre. Gobwa was a Goblina (as her name implies) who evolved up. There are now many more Ogres than just the survivors of the village from season 1 -- they are the Kurenai unit under Benimaru.
