I feel like Emma was trying to communicate that she wants to be with someone who values education and even though Jesus is saying he'll get his GED, he's not saying it cause he thinks it's important or he really wants it. He's saying it cause it's the only even slightly possible way that his moms will let him drop out. And he hasn't really given much respect to education since his TBI which I get cause obviously as he has to relearn things and think in new ways, education has become much harder but his response to that has been to give up in a lot of ways and I think that overall attitude is what's bothering Emma. At least, that's how I saw it.
