She was done with playing Maddie, you can also tell later in the series she might have just preferred voice acting (and she's amazing as Candace so). She stuck with her Candace role on Phineas and Ferb and trying to focus on singing and movie roles.

And a character Maddie, was getting more and more attention from everywhere and was getting booked all over the place! That's why they couldn't do anything with them. But yea... it would have been great!!

Could have even made it more mature by having them navigate college life (if London ever manages to get into a university ofc lol). If the nun was in it, I would have hated it. She's so bias towards London that it just makes me angry rather than find it funny...
