i also think Terri has always been insecure with guys. She grew confident with her looks from modeling, but still seemed insecure with whether guys liked her or not, so him showing an interest and gaslighting her so much is believable.

With the perception she has of herself, even with the job she has as a plus size model on the show, and Rick being her first boyfriend Terri would be swept up in all the romance Rick is showering her with she would be in the euphoria stage of dating. When talking to Rick to calm him down she said, "of course I love you." but to Hazel all Terri said was that she still cared for him.
