Yeah, I recognized her from several other TV shows. "Black Lightning" season 3 on The CW and on SyFy's "Z Nation". Her character on Black Lightning is similar to the one on The Mandalorian, except without the Imperial Cruiser. :)

Moff Gideon's female officer is played by Katy O'Brien, an actress with a long history in the martial arts and she looks the part of an Imperial officer, not some 80 pound waif.
