If i had to choose any part of one piece to be redone, I would actually say from fishman island to dressrosa. Also, i'm not sure if you're aware, there's a one piece ova from 1998 (before the anime came out) with different voice actors and a very different animation style to what we saw at the beginning of one piece. I think you might really enjoy watching it in your own time to see how the anime could've turned out. it's called one piece: defeat the pirate ganzack.
