He has a uniquely formal and old-fashioned way of speaking in Japanese, which is why Luffy made that comment about him talking like an old man. It doesn't translate super well just seeing it subbed unless you know the nuances of the language, but this trait is more obvious in English, where he also talks like that in addition to using old-timey terms (like calling Luffy "champ" and Nami "little lady") and expressions (saying he'll be back in "two shakes of a lamb's tail").
