You know, to me it looks like maybe all these succesful actors just wanted to be on the show. https://www.vulture.com/article/the-bear-season-2-guest-star-casting-explained.html I wouldn't assume they necessarily asked for lots of money for this. It's pretty common for acclaimed projects and charismatic leaders to get big talent for close to nothing.
