Probably a bit late for this comment to matter since your much further into the series but saber is literally a girl not a man in a girls body it explains how she had to hide that fact to be king in episode 1

So for example saber would never be summoned as a caster because that doesn't fit the lore of king Arthur at all since he was never a mage and has no talent for magic.

For example if king arthur was summoned as a Lancer he would be way weaker because historically king arthur was a swordsman and therefore more suited to being a saber. The same can be said about any of the other servants as well. So some characters can be potentially nerfed based on the relic used to summon them into a sub optimal class for their heroic spirit. To expand on this, geographical area also can buff or nerf a servant. This grail war is in Japan so if one of the servants summoned is japanese or from that area he would be stronger. It's similar to like home field advantage in sports
