Well, it's cuz there are only 4 True Dragons in Existence... there's a difference between True Dragons and Dragons... The word/title "True" in this show is very important, Veldora has been around for more than a Millennia, and Ifrit is a name of a fire species/spirit, So Veldora knows what/who Ifrit is.

Thus, this possession enabled her to stay alive from both her burn injuries and her unstable magicules from being summoned as a child. The moment Ifrit left her body she no longer had that protection that Ifirt had given her and as a result it took away all the youth she had been retaining for many decades leaving her as a frail old woman which lead to her death.
