Make up your minds! (Also don't forget he sacrificed his life in his movie. He didn't know he would survive the plane crash). PS. He gave the shield to Sam Wilson AKA Falcon (the guy with the wings). PSS. Remember what Hulk/Bruce told The Ancient One. When they returned the stones back, it erases any new branches in time, so there is only one time line. So that means Steve did, in fact, live his life and end up there.

Yeah there's theories about it, but theories are just ideas and no one in real life has ever time traveled. That means these movies can literally just make up whatever kinda bullshit they want and say "that's how time travel works". You have to really suspend your disbelief.
